A bit belatedly, I want to wish everybody a Happy New Year!**! It is well known at New England Culinary Institute that Professor Rex is a francophile when it comes to wine. So I was not surprised when one of the students who is very active in Uncorked!, the wine club on campus, asked me to work with him to organize a tasting of the very best of France's wines. This student, Weston Nicoll, wanted me to choose one really good wine from each of France's six great wine regions, that is , Bordeaux, Burgundy, Champagne, Côtes du Rhône, Loire Valley and Alsace.
