It is well known at New England Culinary Institute that Professor Rex is a francophile when it comes to wine. So I was not surprised when one of the students who is very active in Uncorked!, the wine club on campus, asked me to work with him to organize a tasting of the very best of France's wines. This student, Weston Nicoll, wanted me to choose one really good wine from each of France's six great wine regions, that is , Bordeaux, Burgundy, Champagne, Côtes du Rhône, Loire Valley and Alsace.

I am back in my hometown of San Diego. I would love to come visit and enjoy the fantastic time of an Uncorked session. I guess it will have to wait until graduation in June.
Currently, I am helping to open my second restaurant! It is called Decanter Wine Lounge and is located in Rancho Santa Fe!
